Chipotle Style Veggie Taco

- ginger/garlic paste - 1 tsp shopping list

- cumin powder - 1 tsp shopping list
- tomato - 1 grated shopping list
- INGREDIENTS : salsa - tomato shopping list
- 1/4 onion chopped finely shopping list
- 1 ripe tomato seed removed chopped finely shopping list
- jalapeno - 1/2 (with seed if u want it spicy) shopping list
- garlic - 1/2 a pod crushed and chopped finely shopping list
- salt to taste shopping list
- juice of 1/2 lemon. shopping list
- Corainder leaves - 1 tbsp shopping list
- INGREDIENTS : Guacomole shopping list
- 1 Avacado - flesh scooped and chopped shopping list
- jalapeno - 1/2 (with seed if u want it spicy) shopping list
- garlic - 1/2 a pod crushed and chopped finely shopping list

- tomato - 1/4 deseeded and finely chopped shopping list
- Corainder leaves - 1 tbsp shopping list
- juice of 1/2 lemon. shopping list
- INGREDIENTS : Rice: shopping list
- 1 Cup soaked for 30 mins shopping list
- oil - 1 tsp shopping list
- coriander - 2 tbsp shopping list
- lemon - juice of 1 lemon shopping list
- 1/4 tsp of salt shopping list
- INGREDIENTS : taco shells - 6 . shopping list
- lettuce - 1/2 cup finely chopped. shopping list
How to make it
- METHOD: Beans
- Put oil in a pan add the ginger garlic paste. Saute for some time.
- Add the beans; taco seasoning; cumin; salt (check before you add it as the bean and taco seasoning both might have some salt in it) and grated tomato.
- Simmer for about 20 mins.
- Garnish with coriander leaves.
- METHOD: Tomato salsa
- Mix the ingredients as mentioned.
- Add lemon juice and garnish with coriander leaves.
- METHOD: Guacomole
- Mix the ingredients as mentioned.

- METHOD: Rice:
- Take oil in a pan.
- Add the rice; coriander; lemon juice; salt and 1.5 cup of water. Stir it up once.
- Let it come to boil.
- Cover and let it cook till the rice it done. Do not over cook it.
- METHOD: For serving:
- Bake taco shell (unfilled) for 3 Mins at 250 deg F.
- Put a spoonful of rice in the taco shell and layer it with some beans.
- Top it with salsa; guacamole.
- Finally add freshly chopped lettuce.
