Barbecued Ribs with Spicy Lime Sauce

- 4 racks pork spareribs (about 6 pounds) shopping list
- spice Rub: shopping list
- 2 tbs cinnamon shopping list
- 2 tbs kosher salt shopping list
- 2 tbs black pepper shopping list
- 1 tbs ground coriander shopping list
- 1 tbs ground cloves shopping list
- Spicy lime Sauce: shopping list
- 1/2 cup chopped fresh cilantro shopping list
- 3 tbs coarsley chopped fresh ginger shopping list
- 2 tbs chopped garlic shopping list
- 3/4 cup rice vinegar shopping list
- 1/2 cup soy sauce shopping list
- 1/2 cup ketchup shopping list
- 1/3 cup dark brown sugar shopping list
- 1/3 cup lime juice, fresh shopping list
- 1/4 cup hoisin sauce shopping list
- 2 tbs dark sesame oil shopping list
- 1 tbs Sichaun peppercorns or red pepper flakes shopping list
How to make it
- Combine ingredients of spice rub. Rub all over the ribs, cover tightly and refrigerate for 1 hour.
- Preheat oven to 250 degrees. Roast the ribs, covered tightly with foil, for 3 hours.
- Preheat grill to medium-high.
- Stir all the sauce ingredients until sugar has dissolved. Set aside 1 cup of sauce. Brush the remaining sauce on both side of the roasted ribs. Grill the ribs, turning once, for a total of 15 minutes. Serve with reserved sauce.
- Note: If you want to skip the grill. Brown the ribs on the stovetop. Prepare the sauce and baste the ribs every 20 minutes, while it roasts in the oven, and cook until tender.
