Tomato And Shrimp Pasta With Feta

- coarse salt and ground pepper shopping list
- 1/4 c extra virgin olive oil shopping list
- 1 med. onion,chopped shopping list
- 3 garlic cloves,minced shopping list
- 1 Tbs tomato paste shopping list
- 1 tsp dried oregano shopping list
- 1 can (28 oz) whole, peeled tomatoes shopping list
- 1 can (15 oz) tomato sauce shopping list
- 1/3 c pitted kalamata olives,chopped shopping list
- 1 Tbs capers,rinsed (optional) shopping list
- 12 oz penne rigate shopping list
- 1-1/2 lbs lg. shrimp shopping list
- 8 oz feta cheese shopping list
How to make it
- Set a large pot of salted water to boil. In med saucepan,heat 2 Tbs oil over med-high heat. Add onion and garlic. Cook till soft,5 mins. Add tomato paste and oregan. Cook till fragrant,30 seconds. Add tomatoes,tomato sauce,olives,and capers,if using. Cook,breaking up tomatoes with spoon,until sauce thickens,10 mins. Season with salt and pepper. Reserve 2/3 c tomato sauce for Baked Shrimp(recipe to follow).
- Meanwhile,cook pasta till al dente,according to directions. Drain,return pasta to pot. Add tomato sauce ,shrimp and basil;season with salt and pepper and toss. Garnish with basil leaves.
