Chicken Bacon BBQ Goodness

This is a healthy stuffed chicken breast recipe that is quick and fun to make. It goes great with a baked potato side dish!
Ingredients
- 4 chicken breasts shopping list
- 4 slices of bacon shopping list
- 1 jalapeno shopping list
- 1.5 C fat free mozzarella cheese shopping list
- chopped cilantro shopping list
- 1 shallot shopping list
- 3 cloves of garlic shopping list
- Old Bay Seasoning (or any other seasonings you have on hand that you like) shopping list
- garlic powder shopping list
- 1/2 C BBQ sauce shopping list
- 1/2 C chicken stock shopping list
How to make it
- Heat oven to 375 degrees.
- Prepare a large baking dish.
- Chop shallot, garlic cloves. Add cheese and seasonings.
- Slice Jalapeno into thin round slices.
- Pound chicken breasts between two pieces of cling wrap until they are thin.
- Place shallot, garlic, cheese and seasonings mixture onto flatted chicken breast.
- Roll up chicken breast and wrap chicken breast in bacon. Repeat until each of the chicken breasts has been rolled up and wrapped.
- Sprinkle top of chicken with Jalapeno slices.
- Whisk together BBQ sauce and chicken stock.
- Poor mixture over chicken.
- Cover baking dish with tin foil.
- Place in oven.
