How to make it

  • Open the can of asparagus and drain well
  • Dab the asparagus dry with a paper towel (you do not want too much moisture)
  • Place the asparagus into a salad bowl
  • Put in the eggs, cheese and spring onions
  • Season with salt and pepper to taste
  • Mix the mayo and mustard
  • Spoon thru the dressing
  • Sprinkle the parsley over the salad and enjoy
