How to make it

  • Heat a 10" non stick skillet medium heat
  • Add and heat oil
  • add onion and saute until soft
  • add chopped tomato and juices, saute for 1 minute
  • add peas as a top layer, don't mix
  • crack eggs on top, 5 around and one in the middle
  • (I usually crack them into a small bowl first, then drop gently over mixture)
  • Cover and cook until whites harden but yokes remail runnyspoon egg and mixture on to plates. Serve with toasted crusty bread.
