Eggs and peas

- 6 eggs shopping list
- 1 tbsp olive oil shopping list
- 1/2 onion diced shopping list
- 2 plum tomatoes, chopped shopping list
- 1 small can of peas shopping list
How to make it
- Heat a 10" non stick skillet medium heat
- Add and heat oil
- add onion and saute until soft
- add chopped tomato and juices, saute for 1 minute
- add peas as a top layer, don't mix
- crack eggs on top, 5 around and one in the middle
- (I usually crack them into a small bowl first, then drop gently over mixture)
- Cover and cook until whites harden but yokes remail runnyspoon egg and mixture on to plates. Serve with toasted crusty bread.
