Oatmeal Pancakes

A healthier version of pancakes (but tastes awesome!) Some whole grains to stop that pancake sugar high! The lemon sauce I included is delish but you can have any topping you like!
Ingredients
- 1 cup whole wheat flour shopping list
- 1 cup rolled oats shopping list
- 1 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 2 tbsp sugar shopping list
- 1 tsp salt shopping list
- 2 eggs shopping list
- 3 tbsp vegetable oil shopping list
- 2 cups buttermilk shopping list
- For the lemon Sauce shopping list
- 1/2 cup sugar shopping list
- 1 tbsp cornstarch shopping list
- 1/8 tsp salt shopping list
- 1 cup boiling water shopping list
- 2 tbsp butter shopping list
- 2 tbsp lemon juice shopping list
- 1 egg yolk shopping list
How to make it
- Combine flour, rolled oats, baking powder, baking soda, sugar and salt
- Combine eggs, oil and buttermilk
- Add liquid ingredients to dry and mix only until blended
- Cook pancakes on hot, lightly oiled griddle
- Serve with hot maple syrup, honey-butter or lemon sauce
- Instructions for Lemon Sauce
- Mix sugar, constarch and salt
- Add boiling water slowly stirring constantly
- Boil for 5 minutes
- Take from heat and add butter, lemon juice and egg yolk
