How to make it

  • Special Equipment: -- ice cream maker (remember to freeze your insert if you have one)
  • Mix the yogurt with the sugar and coconut extract.
  • Let the mixture chill in the refrigerator for at least 1 hour to let the sugar dissolve.
  • Churn the mixture in you ice cream maker, following the manufacturers instructions.
  • Set a dry frying pan over medium heat.
  • When the frying pan is just getting hot, add the coconut flakes.
  • stir constantly until the flakes toast to a golden brown.
  • Dish out onto a plate immediately to stop the coconut flakes from toasting further.
  • In a small bowl, combine the papaya, mango, and kiwi.
  • To serve, divide the frozen yogurt into dessert bowl.
  • Spoon the fruit on top and sprinkle with the toasted coconut flakes.
  • Makes 1 1/2 pints.
