How to make it

  • Use one Kiwi per steak, puree whole Kiwi in blender or food processor
  • Massage pureed Kiwi into both sides of steak, coating well
  • Cover and put in fridge 30-45 minutes (be careful, thin steaks 15-30 minutes, if left on too long meat will turn to mush!)
  • Rinse all Kiwi off of meat under running cold water, pat dry with paper towels
  • Lightly coat with worcestershire sauce (Lea & Perrins), salt and pepper, return to fridge covered for 1 hour.
  • Sear both sides, then grill over indirect heat. This technique works for any red meat.

    I live just down the road from Kiwi and we grow Chinese gooseberries (what Kiwi fruit were called before the marketing types got hold of them). Your right on two points; this works very well and left to long gives you mush steaks. I find it works best if you perforate the steaks and shorten the time you leave the kiwi fruit on it. Grazzi. RJ

    Works with any meat I believe, only tried with steak, kiwis are cheap, try it! I promise you will never grill another fine cut of meat without it! :-)
