Perfect Brunch Pie

- 3/4 c chopped kalamata olives shopping list
- 1/4 c chopped garlic-stuffed green olives shopping list
- 1/2 c plum tomatoes shopping list
- 2 Tbs chopped scallions shopping list
- 2 Tbs chopped red onion shopping list
- 1/2 c chopped white mushrooms shopping list
- 3 cloves garlic,minced shopping list
- 1/2 c chopped marinated artichoke hearts shopping list
- 1/2 c shredded sharp cheddar cheese shopping list
- 1/2 c crumbled feta cheese shopping list
- 1 Tbs finely chopped fresh basil shopping list
- 1 Tbs finely chopped fresh oregano shopping list
- 1 Tbs finely chopped fresh thyme shopping list
- 4 large eggs shopping list
- 1/2 c reduced fat milk shopping list
- kosher salt and fresh ground black pepper shopping list
- 2 Tbs unsalted butter,melted shopping list
- 10 sheets frozen phyllo dough,thawed shopping list
How to make it
- Preheat oven to 350 degrees. Mix kalamata olives and green olives,tomatoes,scallion,onion,mushrooms,garlic and artichoke hearts in large bowl. Stir in both cheeses,the basil,oregano and thyme;set aside,20 mins. Meanwhile beat the eggs,milk,salt and pepper to taste in another bowl.
- Brush a 10" glass or ceramic pie dish with some butter. Stack 6 sheets of phyllo dough(keep the rest covered with damp towel) and cut the stack into 12" round with paring knife. Place 1 phyllo round in prepared dish,brush with butter;continue to layer the remaining phyllo rounds in dish ,brushing each piece with butter before add the next.
- Spread the olive mixture evenly in the phyllo lined dish;then pour egg mixture. Cut remaining 4 sheets of phyllo in 10" rounds. Layer on top of the pie ,brushing each with butter before adding next.
- Bake till top is golden and knife inserted in the middle comes out clean,about 1 hour.. Let rest 10 mins before slicing.
