Muffelettas New Orleans- meat or vegetarian

                    - 1 round bread: French, sourdough, Italian shopping list
- Vegetarian: shopping list
- 1 small eggplant shopping list
- 1 med zucchini shopping list
- 1 large onion shopping list
- 1 red bell pepper shopping list
- 1 green bell pepper shopping list
- 1 beefy tomato shopping list
- slices of swiss or provolone cheese shopping list
- Meat: shopping list
- 1/4 lb sliced meat EACH: salami, ham, pastarami,smokey turkey shopping list
- etc to equal 1 lb together shopping list
- 1/4 lb Sliced cheeses: swiss ,provolone, mozzarella or as you like shopping list
- olive salad for either: makes enough for 1 large or 2 smaller round shopping list
- sandwiches, shopping list
- 1 cup green salad olives shopping list
- 1 cup black pitted olives shopping list
- 2 cloves garlic minced shopping list
- 1 tsp dried oregano shopping list
- 1/2 cup olive oil shopping list
- 4 Tbs fresh chopped parsley shopping list
- salt and pepper to taste shopping list
How to make it 
                    - Prep time does not include making the olive sald and chilling or roasting the veges etc
- Vegetrarian, may be raosted ahead of time
- Slice vegetables and oven roast or grill by your favorite method- I brush mine with olive oil and season to taste
- Veges may make enough two sandwiches
- Set aside to cool
- Cut bread in half and scoop out soft bread from top and bottom and leave a hollow ( save this for bread crumbs etc )
- Spread half the olive salad on the bottom pieces.
- Top with veges, sliced cheese if using and the remainder of the olive salad
- Place top bread on
- Do the same method for the meat and cheese version
- Wrap in plastic and let everything mellow at least three hours before serving
- Remove from fridge and let come to room temp
- Note: sandwiches may be prepared a day in advance
- Olive salad: Beast prepared a day ahead of time
- Rough chop olives , garlic, parsley in a food processer
- Add the olive oil, oregano and seasoning to taste
- I usaully cut sandwhiches into 8 pieces since I serve it with Cajun Potato salad and other stuff
