How to make it

  • Prep time does not include making the olive sald and chilling or roasting the veges etc
  • Vegetrarian, may be raosted ahead of time
  • Slice vegetables and oven roast or grill by your favorite method- I brush mine with olive oil and season to taste
  • Veges may make enough two sandwiches
  • Set aside to cool
  • Cut bread in half and scoop out soft bread from top and bottom and leave a hollow ( save this for bread crumbs etc )
  • Spread half the olive salad on the bottom pieces.
  • Top with veges, sliced cheese if using and the remainder of the olive salad
  • Place top bread on
  • Do the same method for the meat and cheese version
  • Wrap in plastic and let everything mellow at least three hours before serving
  • Remove from fridge and let come to room temp
  • Note: sandwiches may be prepared a day in advance
  • Olive salad: Beast prepared a day ahead of time
  • Rough chop olives , garlic, parsley in a food processer
  • Add the olive oil, oregano and seasoning to taste
  • I usaully cut sandwhiches into 8 pieces since I serve it with Cajun Potato salad and other stuff
