How to make it

  • Slice the aubergines and potatoes, par boil the potatoes, drain and dry off, put on baking trays with the aubergines and drissle oil over them and put into a pre heated oven for about 20 mins, turning halfway through the time
  • when cooked take out and put to one side
  • prepare the peppers, garlic and onion, put onto another tray drissle with oil and cook in the oven for about 20 mins
  • then add the cherry toms and cook for a further 5-10 minutes
  • now in a deep baking tray layer the potaoes covering the bottom
  • then layer the aubergines over the potatoes
  • put half the veg over the aubergines
  • sprinkle the feta cheese over the veg
  • now pour half the passata over the veg
  • and then add the rest of the veg
  • you can add thyme or mixed herbs if you want, i also add a teaspoon of cinnamon
  • now add the rest of the passata
  • in a large bowl add the 3 eggs yogurt and crumbly cheese and mix together well
  • now pour this mixture over the vegetables
  • cook in a medium oven for about 45-60 minutes, until the topping is firm
