Vegetarian Moussaka

- aubergines, 1x large or 2x small thickly sliced shopping list
- onions x2 chopped into chunks shopping list
- red peppers x2 cut into chunks shopping list
- potatoes x2 thickly sliced ( i leave the skin on ) shopping list
- garlic cloves cut into chunks shopping list
- virgin oil shopping list
- thyme or mixed herbs shopping list
- cherry tomatoes 250g shopping list
- passata 250g carton (sieved tomatoes) shopping list
- feta cheese 200g cubed shopping list
- for the topping shopping list
- crumbly cheese ( i use cheshire) 250g shopping list
- a tub of low fat yogurt 500g shopping list
- 3 eggs shopping list
How to make it
- Slice the aubergines and potatoes, par boil the potatoes, drain and dry off, put on baking trays with the aubergines and drissle oil over them and put into a pre heated oven for about 20 mins, turning halfway through the time
- when cooked take out and put to one side
- prepare the peppers, garlic and onion, put onto another tray drissle with oil and cook in the oven for about 20 mins
- then add the cherry toms and cook for a further 5-10 minutes
- now in a deep baking tray layer the potaoes covering the bottom
- then layer the aubergines over the potatoes
- put half the veg over the aubergines
- sprinkle the feta cheese over the veg
- now pour half the passata over the veg
- and then add the rest of the veg
- you can add thyme or mixed herbs if you want, i also add a teaspoon of cinnamon
- now add the rest of the passata
- in a large bowl add the 3 eggs yogurt and crumbly cheese and mix together well
- now pour this mixture over the vegetables
- cook in a medium oven for about 45-60 minutes, until the topping is firm
