Lima Bean Spread

- 2 cups frozen lima beans shopping list
- 2 cloves garlic, peeled and sliced (or crushed if you prefer) shopping list
- 1/2 cup water shopping list
- salt shopping list
- 3 tablespoons olive oil shopping list
- 1 lemon shopping list
- Freshly ground black pepper shopping list
- flat bread crackers (for spread) or bread (for crostini) shopping list
How to make it
- Combine lima beans, garlic, 1⁄2 cup water and a pinch of salt in a small pot.
- Bring to a boil over medium-high heat, cover, reduce heat to low, and simmer for 15 minutes.
- Put the contents of the pot into a food processor and coarsely purée (or you can just mash by hand).
- Mix in the olive oil.
- Add lemon juice to taste (perhaps 1 to 2 tablespoons)
- Season with salt and pepper.
- The beans can be served in a bowl as a cracker spread (I like it with flat bread) or spread on toasted bread as a crostini.
