How to make it

  • Combine lima beans, garlic, 1⁄2 cup water and a pinch of salt in a small pot.
  • Bring to a boil over medium-high heat, cover, reduce heat to low, and simmer for 15 minutes.
  • Put the contents of the pot into a food processor and coarsely purée (or you can just mash by hand).
  • Mix in the olive oil.
  • Add lemon juice to taste (perhaps 1 to 2 tablespoons)
  • Season with salt and pepper.
  • The beans can be served in a bowl as a cracker spread (I like it with flat bread) or spread on toasted bread as a crostini.
