How to make it

  • Combine all ingredients for crepes in a blender and pulse until mixed. (about 20-30 seconds)
  • Place batter in the refrigerator for a hour.
  • For the crepe filling, combine all ingredients in a bowl and mix together.
  • Heat a nonstick pan on medium and coat with butter. pour 1 oz of batter and spread around to a good size. cook for about 30 seconds on each side and set aside to cool.
  • Topping:
  • Place oil in a sauce pan and heat on medium.
  • Add onions, peppers, garlic, creole seasoning and salt.
  • Saute until softened about 2 minutes.
  • add in tomato.
  • Next add the wine to deglaze the pan followed by the cream.
  • stir until smooth and the sauce sticks to the back of the spoon.
  • add in crawfish and break in the butter to sauce while stirring.
  • When crawfish is fully cooked and butter is fully mixed remove pan from heat.
  • Assembly:
  • Heat oven to 350 degrees
  • Lightly spray a large glass baking dish with non-stick spray.
  • Divide filling among crepes.
  • Roll and place in baking dish, seam side down.
  • cook for 15-20 minutes.
  • Place crepes on a plate and top with crawfish topping.
