How to make it

  • Mix Orange Juice, White Wine, Lime Juice, Lemon Juice, Ginger Root, Zest, and Shallots in Sauce Pot. Reduce until Au Sec
  • Mix in Heavy Cream and reduce by 1/2-3/4
  • Take off heat and lower burner to low. Gradually incorporate butter few cubes at a time until all is in
  • Strain through fine mesh strainer or Chinoise
  • If refrigerating, heat up as you would chocolate. 10-15 sec then stir... Repeat.
