How to make it

  • Preheat oven to 350 degrees F.
  • In a large bowl, toss together the noodles, soup, and broth. Add the chicken, 2 cups of the cheese, the almonds, pimento, mushrooms, and salt and pepper, to taste, and toss gently to combine. Transfer the mixture to a greased 13 by 9 casserole and top with the remaining cup of cheese.
  • Bake for 30 minutes, or until bubbly.

    This looks a good recipe, however, rather than using canned mushrooms which have the consistency of weak rubber I would suggest a comparable quantity of fresh. In fact, where anything is canned in a recipe and it is possible to replace with with fresh ingredients, I would do so. Even the mushroom soup, save this recipe for a day when you've made some cream of mushroom soup from fresh, which is dead easy, (I did it without even looking at a recipe). Then all your ingredients will be filled with tastiness. Fresh is always better.
