Pork N Slaw Sandwiches - Diabetic Friendly

- 3 Tbs. cider vinegar shopping list
- 4 tsp. sugar or sugar substitute Equal shopping list
- 2 tsp. canola oil shopping list
- 1 tsp. Dijon mustard shopping list
- ¼ tsp. celery seed shopping list
- ¼ tsp. mustard seed shopping list
- ¼ tsp. salt shopping list
- 1/8 tsp. pepper shopping list
- 1 cup shredded green cabbage shopping list
- 1 cup shredded cabbage shopping list
- 1 large carrot, shredded shopping list
- 1 ½ pound pork tenderloin shopping list
- 1 cup barbecue sauce – lite shopping list
- 6 kaiser rolls, split shopping list
How to make it
- For coleslaw, in a bowl, whisk together the first eight ingredients. Add cabbage and carrot; toss to coat. Set aside.
- Broil pork 4 – 6 inches from the heat for 6 – 7 minutes on each side or until a meat thermometer reads 160 F. Let stand for 5 minutes. Cut into strips or shred with two forks; place in a bowl. Add barbecue sauce and toss to coat. Serve ½ cup pork mixture and 1/3 cup coleslaw on each roll. Yield: 6 servings.
