Sausage and White Bean Soup

- 1 lb andouille sausage, boiled briefly, and cut in chunks shopping list
- 1 medium onion, diced shopping list
- 1T minced garlic shopping list
- 1T olive oil shopping list
- 1/2 lb carrots.sliced shopping list
- 4 medium potatoes in 1 in chunks, may be peeled if desired shopping list
- 1 large can (or 2 small) diced tomatoes in juice shopping list
- 4 cups prepared white beans (canned or cooked, dried beans) shopping list
- 2 bay leaves shopping list
- 1 t each ground rosemary, oregano, sage & thyme (or more to taste) shopping list
- 1/2 t ginger shopping list
- 1 dried cayenne pepper, crumbled or 2 t crushed red pepper shopping list
- 2 quarts chicken stock shopping list
- 1 cup kale leaves, stemmed and cut in shreds shopping list
- 1 cup mushroom pieces shopping list
- salt & pepper to taste shopping list
How to make it
- Saute onion & garlic in olive oil in soup pot
- Add chicken stock, sausage & herbs, bring to slow boil
- Add tomatoes, carrots & potatoes, cook until tender
- Add beans and simmer at least 1 hour
- Adjust seasonings to taste
- Just before serving add kale & mushrooms and return to boil.
