How to make it

  • Place frozen peas in a large pot.
  • Add the butter or margarine
  • Cover with liquid of choice.
  • Heat and stir over medium heat until mixture comes to a boil
  • Meanwhile dissolve the cornstarch and sugar in the cold cream
  • Then add to the hot peas anbd cook and stir over medium heat till thick ened
  • Remove from heat because once thick, do not overcook the peas or they change their bright bright green color
  • Stir in the chives and season to taste with salt, pepper and nutmeg
