How to make it

  • In medium size skillet, fry bacon, crumble and set aside. Saute onion in the remaining bacon fat and set aside.
  • Meanwhile, combine livers and buttermilk and let stand 10 minutes. Drain in a colander; dredge livers in flour, salt and pepper.
  • Add vegetable oil to bacon fat, if needed, to make a thin layer of fat in the skillet. Turn heat to medium; allow to get hot but not smoking.
  • Fry livers until brown, turning occasionally with spatula. Return the crumbled bacon and onion to the skillet after browning the livers and allow to heat through.

    When I worked downtown, we used to get take out at the Masonic Temple Dining Room. They served Fried Liver & Onions w/Gravy every Friday, alternating Fridays between Calves' Liver and Chicken Livers. It was TO-DIE-FOR!!

    I don't eat it that often either, only because my Mom and I are probably the only members of our family who like it. But I'm gonna treat her for Mothers' Day.
