Cauliflower Mac And Cheese

- 3 cups coarse fresh bread crumbs shopping list
- 2Tbsp. unsalted butter melted shopping list
- 1/4 cup minced fresh flat leaf parsley shopping list
- 8 oz pancetta- minced shopping list
- Kosher salt and black pepper to taste shopping list
- 1 1/2 lb. cauliflower cut into 1/2 in, florets shopping list
- 3-6 tbsp unsalted butter shopping list
- 1/4 c. all purpose flour shopping list
- 2 tbsp white wine shopping list
- 3 1/2 c. milk shopping list
- 2 cups shredded Fontina cheese shopping list
- 3 cups shredded gouda cheese shopping list
- 1/8 tsp cayenne pepper shopping list
- 1/8 tsp. grated nutmeg shopping list
- 1/2 c. heavy cream shopping list
- 1 lb. macaroni, cooked until sl-dente shopping list
How to make it
- Preheat overn to 375. In bowl combine crumbs, melted butter, parsley, 1 tsp salt and 1/2 tsp black pepper.
- In 4 qt. pot over medium heat, cook pancetta 8 min.
- Transfer to small bowl: reserve fat
- Cook cauliflower in batches 10-12 minadd 1-3 tbsp of butter if needed
- Transfer to bowl.
- Deglaze pot with 2 Tbsp water and then pour over cauliflower
- Wash Pot
- In same pot over medium heat melt 3 tbsp butter.
- Cook flour 3 min.
- whisk in wine and milk; cook 10 min.
- stir in cheeses, 2 tsp salt, 1 tsp black pepper, cayenne, nutmeg and cream,
- Then pasta , pancetta and cauliflower.
- Top with breadcrumbs
- bake
- 30 min, broil 4 to 5 min till top is golden brown
