quick and easy bean tostadas

easy way to make yourself and a friend something hot and good to munch on
Ingredients
- 20 corn tortillas shopping list
- 1 can bean with bacon soup, no water added shopping list
- 1 c hot salsa shopping list
- 1 c grated cheese shopping list
- 1 sm onion, diced shopping list
- 2 jalapeno slices per tortilla shopping list
- 8 oz carton sour cream shopping list
- remaining salsa shopping list
How to make it
- combine all ingredients except tortillas and jalapenos
- spread 1 tbsp of mixture on tortilla
- add jalapenos on one edge
- roll up from edge with jalapenos so that the peppers are in middle of rolled tortilla
- place on platter with open edge down
- microwave on medium for approximately 4 minutes (use your judgement-your oven may cook them faster or slower) turning platter in middle of cooking time if you do not have a turntable
- serve with sour cream and salsa as dips
- if you would prefer crispy roll-ups, place on cookie sheet sprayed with cooking spray and place in 350F oven for 6-10 minutes
