Shawmut Inn Marine Scallops

- 1 1/2 Lbs. sea scallops, preferably you can get fresh ones (DO NOT RINSE!) shopping list
- 2 Tbsp. sherry shopping list
- 1/4 Tsp. white pepper shopping list
- 1 Tbsp. chopped parsley shopping list
- 1/2 Cup butter or margarine (Melted, reserve 2 Tbs.) shopping list
- 1/4 Tsp. salt shopping list
- 1/2 Cup cracker crumbs (like 'Ritz' crackers, or you could also use the premade 'progresso' type bread crumbs) shopping list
How to make it
- Preheat oven to 350 F.
- Lightly grease baking dish (like a 9x13x2 pyrex... but any glass dish that you can spread the scallops out in a single layer will work)
- Spread scallops and "scallop juice" in the dish evenly, single layer
- Pour melted butter (except the 2 Tbsp. ) over scallops.
- Sprinkle with sherry, salt and pepper.
- Bake for 20 min. Remove from oven.
- Mix cracker crumbs with remaining, 2Tbs, butter.
- Top scallops with buttered bread crumbs and parsley.
- Place under broiler 1 min
