How to make it

  • Preheat oven to 350.
  • Spray cut side of spaghetti squash halves with spray.
  • Bake cut side up uncovered on a baking sheet for 50 minutes.
  • While squash is cooking heat oil in large nonstick pan over medium high heat.
  • Press garlic into oil then let simmer 3 minutes per side.
  • Add chicken breasts and soy sauce then cook 2 minutes per side.
  • Add onion and cook until tender then reduce heat.
  • Add mandarin oranges and reserved syrup from 1 can.
  • Simmer until chicken is done and juices run clear and oranges begin to break down and thicken.
  • Remove spaghetti squash from oven and scrape insides with fork to resemble spaghetti strands.
  • Place squash strands into large serving dish then pour chicken and sauce over top and serve.
