Mandarin Orange Chicken

- 1 large spaghetti squash cut in half shopping list
- butter flavored nonstick cooking spray shopping list
- 1/4 cup olive oil shopping list
- 4 cloves garlic shopping list
- 4 boneless, skinless chicken breasts shopping list
- 3 tablespoons soy sauce shopping list
- 1/4 cup chopped white onion shopping list
- 22 ounces canned mandarin oranges in light syrup with syrup reserved shopping list
How to make it
- Preheat oven to 350.
- Spray cut side of spaghetti squash halves with spray.
- Bake cut side up uncovered on a baking sheet for 50 minutes.
- While squash is cooking heat oil in large nonstick pan over medium high heat.
- Press garlic into oil then let simmer 3 minutes per side.
- Add chicken breasts and soy sauce then cook 2 minutes per side.
- Add onion and cook until tender then reduce heat.
- Add mandarin oranges and reserved syrup from 1 can.
- Simmer until chicken is done and juices run clear and oranges begin to break down and thicken.
- Remove spaghetti squash from oven and scrape insides with fork to resemble spaghetti strands.
- Place squash strands into large serving dish then pour chicken and sauce over top and serve.
