How to make it

  • *Before I start with this, I don't know how to make a tomato pesto, but a tomato sauce works just as well I think. Remember, I'm making this at work, so I'm trying to translate it to something at home.
  • Set your oven to broil
  • In a plastic container place all diced ingredients (make sure everything is in small pieces, otherwise it wont cook as well)
  • Put the lid on it and shake it up so everything is mixed together
  • Core out the piece of Cibatta (you want to make sure it's not a mid section, you want the rounded end to hold everything in)
  • Take either tomato pesto or tomato sauce and line the inside of the bread
  • Stuff everything from the plastic contanier into bread
  • Wrap in parchment paper (I just wrap it in the paper we use for sandwiches)
  • Put in the oven for about 6 mins or until the cheese inside has melted
  • If you have a panini gril you can take it from the oven and then grill the outside so it has more of a crunch, but you don't have to.
