How to make it

  • Place drained chickpeas into bowl
  • Add zest, juice, and next 4 ingredients.
  • Stir to coat chickpeas.
  • Set aside
  • Heat oil in large frying pan.
  • When hot, add onions and stirfry for 4 minutes or until just beginning to colour.
  • Reduce heat and add peppers.
  • Cook for another 3-4 minutes, stirring ocassionally, until vegetables are almost tender.
  • Stir in tomatoes and chickpeas.
  • Cook 2 minutes or until vegetables are tender and everything is hot.

    I can't wait to try this! I have most of the ingredients at home already, however what is garam masala? I'm not familiar with it. Is it a spice or wine? This is why I'm enjoying vegan cooking so much, so many new and interesting things!
