Sweet N Spicy Garbanzo Beans

- 1 can garbanzo beans; drained & rinsed ( chickpeas) shopping list
- Zest & juice of 1 lime shopping list
- 1 tsp white sugar shopping list
- 1 tsp garam masala shopping list
- 1/2 tsp cinnamon shopping list
- 1 tsp oregano shopping list
- 2 tbsp canola oil shopping list
- 2 small onions, halved and thickly sliced shopping list
- 2 bell peppers (your choice of colours); halved and thickly sliced shopping list
- 12 cherry tomatoes; halved shopping list
How to make it
- Place drained chickpeas into bowl
- Add zest, juice, and next 4 ingredients.
- Stir to coat chickpeas.
- Set aside
- Heat oil in large frying pan.
- When hot, add onions and stirfry for 4 minutes or until just beginning to colour.
- Reduce heat and add peppers.
- Cook for another 3-4 minutes, stirring ocassionally, until vegetables are almost tender.
- Stir in tomatoes and chickpeas.
- Cook 2 minutes or until vegetables are tender and everything is hot.
