This is one of the most impressive looking and tasting bean recipes I have come across in a long time. I doubled this recipe and esrve it at a dinner party last night. There were no leftovers and I was asked for the recipe several times. Enjoy

Ingredients
  • 2 cups cannellini beans
  • 10 pastrami strips
  • 1 medium onion chopped
  • 2 garlic cloves
  • 3 banana peppers chopped
  • 1 tablespoon tomato paste
  • 2 tomatoes diced
  • 2 tablespoons butter
  • 1/2 teaspoon crushed pepper
  • 1/2 teaspoon dried mint flakes
  • 1/2 teaspoon oregano leaves
  • 1 teaspoon salt
  • 2 cups water

Directions
  1. Heat oil in a big pot and stir in onions and garlic cloves.
  2. Cook until onions are soft then stir in peppers and cook for 2 more minutes.
  3. Add paste then cook for another 2 minutes.
  4. Add tomatoes, oregano, crushed pepper, mint flakes and salt.
  5. Stir for 5 minutes then stir in beans.
  6. Tear pastrami strips in to bite size pieces.
  7. Place them on top of beans with dried hot peppers.
  8. Add water then seal pot with aluminum foil and cover.
  9. Cook on low for an hour.

Where does the water get added? I'm guessing at the paste or just after.
