How to make it

  • Place oil in large pot
  • Saute diced onion for 4 minutes
  • Add garlic and red pepper flakes and saute for 1 minute
  • Add bacon and saute till browned
  • Pour frozen peas into pot and let thaw for a few minutes by stirring
  • Add salt and black pepper to taste
  • Add enough water to cover the peas and cover pot with lid
  • Braise for 1 hour on stovetop, checking every so often to be sure there is enough water (I actually covered pot with foil and then put lid on)
  • After 1 hour, add smoked turkey wings -stirring them down into the peas
  • Braise an additional 2 hours. stirring to prevent peas from sticking and checking to be sure water has not evaporated
  • After 2 hours, add defrosted chopped spinach and stir into the peas
  • Stir and cook another 30 mins and serve. Peas and spinach will have a creamy consistancy and turkey meat will be soft and almost falling off the bones
