Parsnip Chowder

- 1/4 pound salt pork diced shopping list
- 1 medium white onion chopped shopping list
- 3 tablespoons all purpose flour shopping list
- 4 medium parsnips peeled and diced shopping list
- 4 medium potatoes peeled and diced shopping list
- 2 cups water shopping list
- 4 cups milk shopping list
- 8 ounces chopped fresh spinach shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Cook salt pork in large heavy pot over moderate heat until crisp.
- Remove with a slotted spoon and reserve.
- In remaining fat cook onion and flour until onion is tender but not browned about 5 minutes.
- Add parsnips and potatoes stirring to coat well and cook 5 minutes.
- Add water then bring to a boil and simmer covered 30 minutes.
- Add milk and spinach then bring to a boil and serve garnished with reserved salt pork.
