How to make it

  • Cook salt pork in large heavy pot over moderate heat until crisp.
  • Remove with a slotted spoon and reserve.
  • In remaining fat cook onion and flour until onion is tender but not browned about 5 minutes.
  • Add parsnips and potatoes stirring to coat well and cook 5 minutes.
  • Add water then bring to a boil and simmer covered 30 minutes.
  • Add milk and spinach then bring to a boil and serve garnished with reserved salt pork.

    I like Parsnips a great deal,they are very sweet when left in the ground over winter.It is a shame they are underlined so,because if they are tame and not wild then there is no problem with this close cousin to the carrot.

    I shall try this different and unique recipe very soon.
