How to make it

  • Thaw fish if frozen then preheat broiler and rinse fish then pat dry with paper towels.
  • Cut fish into serving size portions then place on greased unheated rack of a broiler pan.
  • Tuck under any thin edges then sprinkle lightly with salt and pepper.
  • Brush 2 teaspoons of the butter over fish then broil fish 4” from heat 15 minutes.
  • Combine remaining butter, crumbs, parsley, peel, juice, garlic, oregano, pepper and salt.
  • Spoon mixture over broiled fish then broil 2 minutes more or until topping is lightly golden.
  • Transfer fish to a serving platter then serve with orange wedges.
