Cuban Broiled Snapper With Parsley

- 1 pound fresh or frozen skinless red snapper fillets shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 2 tablespoons butter melted shopping list
- 3/4 cup soft bread crumbs shopping list
- 2 tablespoons snipped fresh flat leaf parsley shopping list
- 1 teaspoon finely shredded orange peel shopping list
- 1 tablespoon orange juice shopping list
- 1 clove garlic minced shopping list
- 1/4 teaspoon dried oregano crushed shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 1/8 teaspoon salt shopping list
- orange wedges for garnish shopping list
How to make it
- Thaw fish if frozen then preheat broiler and rinse fish then pat dry with paper towels.
- Cut fish into serving size portions then place on greased unheated rack of a broiler pan.
- Tuck under any thin edges then sprinkle lightly with salt and pepper.
- Brush 2 teaspoons of the butter over fish then broil fish 4” from heat 15 minutes.
- Combine remaining butter, crumbs, parsley, peel, juice, garlic, oregano, pepper and salt.
- Spoon mixture over broiled fish then broil 2 minutes more or until topping is lightly golden.
- Transfer fish to a serving platter then serve with orange wedges.
