This is very tasty and very colorful. Very impressive but so many great tastes in one delightful dish.

Ingredients
  • 2 potatoes cut in rounds
  • 6 banana peppers cut in big pieces
  • 2 tomatoes cut in rounds
  • 2 tomatoes grated
  • 1 cup hot water
  • 2 tablespoons olive oil
  • 2 cloves garlic thinly sliced
  • Meatballs:
  • 1 pound ground beef
  • 2 slices stale bread
  • 2 eggs
  • 1 teaspoon cumin
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon oregano leaves
  • 1/2 teaspoon salt
  • 1 large clove garlic minced
  • 1 onion grated or finely chopped
  • 1/3 cup chopped fresh parsley

Directions
  1. Put all meatball ingredients in bowl and mix well.
  2. Shape into round meatballs.
  3. In an oven dish place meatballs, potatoes and peppers one after the other.
  4. Put tomato slices on top and sprinkle with sliced garlic.
  5. Pour grated tomatoes, hot water, and butter over top.
  6. Sprinkle red pepper flakes on top.
  7. First let it boil on the stove for a couple of minutes then bake at 400 for 30 minutes.
