Salmon Patties With Lemon Sauce

- 1 (14.75 oz) can good quality pink salmon shopping list
- 2 tablespoons butter shopping list
- 1 medium onion, chopped shopping list
- 2 cloves garlic, minced shopping list
- 2/3 cup cracker or panko crumbs shopping list
- 2 teaspoons Old Bay Seasoning shopping list
- 2 eggs, beaten shopping list
- 1/4 cup chopped fresh parsley shopping list
- 1 teaspoon dry mustard shopping list
- olive oil and butter for frying shopping list
- SAUCE shopping list
- 2 tablespoons butter shopping list
- 4 teaspoons flour shopping list
- 3/4 cup milk shopping list
- 2 tablespoons lemon juice shopping list
- 1/4 teaspoon salt shopping list
- 1/8 or more cayenne pepper shopping list
How to make it
- PATTIES
- Drain the salmon, reserving 3/4 cup of the liquid
- Flake the meat
- Melt butter in a large skillet over medium high heat and saute the onions and garlic until tender
- In a medium bowl, combine the onion and garlic mixture with the reserved salmon liquid, 1/3 of the cracker crumbs, eggs, parsley, mustard, Old Bay, and salmon
- Mix until well blended, then shape into 6 patties
- Coat patties with remaining crumbs
- Melt butter in a large skillet and add olive oil over medium heat
- Cook patties until browned, turn and brown other side
- SAUCE
- Melt butter in a saucepan over medium heat
- Stir in the flour to form a smooth paste
- Gradually stir in the milk and bring to a boil, stirring constantly
- Cook for 2 minutes or until thickened
- Remove from heat and stir in lemon juice, salt and cayenne pepper
- Serve over Salmon patties
