How to make it

  • Preheat oven to 350F. Line an 8" square pan with greased foil or parchment.
  • In a food processor, puree tofu, cranberry juice, honey, brown sugar and peanut butter. Scrape into a large bowl.
  • Stir in the remaining ingredients until everything is well combined.
  • Press / scrape into the pan, smoothing the top.
  • Bake 35 minutes. Chill overnight in the pan before cutting and serving.

    I haven't but you could do it with xanthan gum and rice bran/germ. Probably would need an extra egg to bind it though. Let me know if you try it!

    I wonder if there is a way to do this without the wheat and gluten. It looks good and is probably a handy snack. Have you ever tried it without those ingredients?
