How to make it

  • Dredge chicken in combined flour, salt and pepper and shake off excess.
  • In skillet over medium heat brown chicken in olive oil, cooking a few minutes on each side.
  • Transfer chicken to a large baking dish.
  • Tuck in garlic, carrots, onion, bay leaves, between chicken pieces.
  • Sprinkle on the herbs and raisins and top with the cabbage.
  • Season with some salt and pepper.
  • Pour on the stock and cider.
  • Cover with foil and bake 1 1/4 to 1 1/2 hours until chicken is tender.
  • Serves 6.

    There is no oven temp listed, but I found the same recipe on Genius Kitchen and it says 325F. That recipe also says skin-on chicken and I would use that next time too. It says hard cider or apple cider as well, and to serve with mashed potatoes. There's a lot of sauce so you want to serve it with something that will soak up the sauce.
    It was a nice change up from the usual chicken recipes!
