Irish Chicken Cabbage and Cider

- 1/3 cup flour shopping list
- salt and pepper to taste shopping list
- six chicken breasts bone in , about 6 ounces each shopping list
- 1/4 cup olive oil shopping list
- salt and pepper shopping list
- 3 carrots thick sliced shopping list
- 4 to 5 cloves garlic shopping list
- 1 large onion thick sliced shopping list
- 3 bay leaves shopping list
- 1/2 cup golden raisins shopping list
- 2 Tbs chopped parsley shopping list
- 2 Tbs fresh chopped rosemary shopping list
- 2 cups shredded savoy cabbage shopping list
- 1 cup chicken stock shopping list
- 1 cup dry Irish cider shopping list
How to make it
- Dredge chicken in combined flour, salt and pepper and shake off excess.
- In skillet over medium heat brown chicken in olive oil, cooking a few minutes on each side.
- Transfer chicken to a large baking dish.
- Tuck in garlic, carrots, onion, bay leaves, between chicken pieces.
- Sprinkle on the herbs and raisins and top with the cabbage.
- Season with some salt and pepper.
- Pour on the stock and cider.
- Cover with foil and bake 1 1/4 to 1 1/2 hours until chicken is tender.
- Serves 6.

There is no oven temp listed, but I found the same recipe on Genius Kitchen and it says 325F. That recipe also says skin-on chicken and I would use that next time too. It says hard cider or apple cider as well, and to serve with mashed potatoes. Ther...more
