Butterbean And Chorizo Cassoulet

- Butterbeans x 2 tins - drained & rinsed shopping list
- tomatoes x 2 tins shopping list
- garlic cloves - finely chopped shopping list
- fennel seeds - 1 teaspoon shopping list
- dried chilli flakes 1/2 teasoon shopping list
- chorizo sausage x 2 (enough for 4 servings) sliced shopping list
- olive oil for cooking shopping list
- salt & pepper shopping list
How to make it
- Heat a little oil in saucepan on medium heat add garlic fennel seeds & chilli flakes fry until garlic has coloured a little & seeds are toasted add chorizo fry for another minute or so.
- Add tinned tomatoes stir around turn heat down to simmer leave sauce to thicken for about 25 mins.
- Add butterbeans to sauce turn heat up add salt and pepper & serve
