Potato Leek Soup

Easy and delicious potato-leek soup.Great use for leftover mashed potatoes. From Everyday Food
Ingredients
- 1 tsp butter shopping list
- 1 c leeks,chopped(white and lt. green parts only) shopping list
- 3-1/2 c low-sodium chicken or vegetable broth shopping list
- 1/2 c water shopping list
- 3 sprigs thyme shopping list
- 2 c mashed potatoes shopping list
How to make it
- In large saucepan,melt butter over med-high heat. Add leeks and cook stirring until softened,about 3 mins. Add chicken or vegetable broth,water and thyme. Bring to boil. Reduce to simmer and whisk in mashed potatoes. Simmer till warmed through.
