Chicken with Lemon and Olives

- 1/4 c orange juice shopping list
- 1/4 c fresh lemon juice shopping list
- 3 Tbs olive oil shopping list
- 2 Tbs honey shopping list
- 3/4 tsp cumin,ground shopping list
- 6 garlic cloves,coarsely chopped shopping list
- 4 chiclken leg quarters,skinned shopping list
- 1/2 tsp salt shopping list
- 16 pimiento-stuffed green olives,halved shopping list
- 1 lemon,thinly sliced shopping list
- 1/4 c fresh flat-leaf parsley leaves shopping list
How to make it
- Preheat oven to 400 degrees.
- Combine first 7 ingredients,marinate at room temperature 30 mins.
- Pour marinade into 13x9" baking dish. Heat laege skillet over med-high heat. Add chicken;cook 3 mins on each side or till browned. Arrange chicken in dish;sprinkle with salt and pepper. Top with olives and lemon slices. Bake at 400 for 40 mins or till thermometer reads 165 degrees.
- Remove chicken from dish;keep warm. Stran sauce over a saucepan;reserving solids. Bring sauce to boil;cook 3 mins. or till slightly thick. Stir in olives and garlic;;serve with chicken and lemons. Top with parsley.
