How to make it
- Fry bacon in large cast iron or heavy frying pan on medium for about 5 minutes until crisp. Drain and discard all but 2 tbsp. (30ml) drippings. Set reserved drippings aside. Leave bacon in frying pan.
- Add onion to bacon. Saute for about 5 minutes until onion is softened. Remove from pan. Keep warm.
- Mix flour, salt and pepper in shallow dish or on waxed paper. Dredge liver in flour mixture. Shake gently to remove excess. Heat reserved drippings in same pan on medium-low. Add liver. Cook for 3 to 4 minutes per side for 5 to 6 minutes per side for well done. Serve topped with bacon mixture. Serves 2.
