Lean and Spicy Meatloaf

- 1 tablespoon coarse sea salt shopping list
- 1 teaspoon ground cayenne pepper shopping list
- 1/2 teaspoon cumin shopping list
- 1/2 teaspoon white pepper shopping list
- 1 teaspoon black pepper shopping list
- 1/2 teaspoon freshly ground nutmeg shopping list
- 2 whole bay leaves shopping list
- Meat Loaf: shopping list
- olive oil to film a 10-inch sauté pan shopping list
- 3/4 cup finely chopped red onion shopping list
- 1/2 cup finely chopped green bell pepper shopping list
- 1/2 cup finely chopped celery shopping list
- 1 tablespoon worcestershire sauce shopping list
- 2 teaspoons finely chopped garlic shopping list
- 1/2 cup red wine shopping list
- 1 pound ground beef shopping list
- 1 pound ground pork shopping list
- 2 eggs lightly beaten shopping list
- 3 tablespoons tomato paste shopping list
How to make it
- Combine seasoning mix ingredients in a small bowl and set aside.
- Film the pan with olive oil over medium heat.
- Add onions, celery, bell peppers, garlic, Worcestershire Sauce and seasoning mix.
- Sauté until mixture starts sticking to pan stirring occasionally and scraping bottom well.
- Stir in wine and allow to cook stirring often until wine has totally evaporated.
- Remove from heat and allow mixture to cool to room temperature.
- Place beef and pork in a large mixing bowl.
- Add eggs, cooked vegetable mixture with bay leaves removed and tomato paste.
- Mix by hand until thoroughly combined then place mixture into ungreased loaf pan.
- Bake uncovered at 350 for 30 minutes then raise heat to 400 and cook 35 minutes longer.
