  • Place the almond inside the dates and close it
  • Melt the chocolate in the oven.
  • Dip the stuffed dates in the chocolate and roll it in the desiccated coconut
  • keep it in the freezer for 30 mins and serve cool

    This sounds quite good, but I would add that when melting the chocolate you want to aim for around 91 F, being careful not to exceed 94 F. Keeping within that temperature range ensures that the chocolate is properly tempered and forms a nice crisp glossy shell. This may be somewhat easier to do in a double boiler or over an electric heater than in the oven.
