How to make it

  • 1. Heat sunflower oil in a saucepan and add bay leaves, peppercorns and onions. Fry stirring often until onions are golden brown in colour. turn down heat and leave the onions to simmer for 10 minutes so that the onions soften.
  • 2. Add Ginger and Garlic and fry, stirring now and then for 3 minutes
  • 3. Mix in tomato puree and fry until oil separates (usually takes 20-30 minutes)
  • 4. Ture up the heat Add Minced Lamb (or Beef) Green peas, Chilli, Turmeric, Garam Masala and salt. Put the sauce pan lit on and leave to simmer on a low heat and leave the lamb to cook out, Stirring Occansionally (usually for about 45 minutes).
  • 5. add some coriander leaves
  • 6. Serve on rice and naan bread on the side

    I have used this recipe including 2 grated carrots & 2 handfuls of dried cranberries to fill a filo pie. It works a treat!
