Cucumber Relish

This is a sweet sour oniony cucumber relish, it is good as a side dish for spicy recipes or casseroles. It makes about 3-4 cups.

Peel, mince and drain the cucumber (leave draining till the end)
Peel, mince and drain onion (just any main excess juice)
Peel, dice apples
Cook apples with vinegar and sugar and salt until apples are soft and boiling. Simmer. Let it cool right down.
Add onion, mix, add cucumber, mix
Bottle

I use the blender Close

I also add onion chunks Close

Bring to the boil Close

Add onion once cool Close

And cucumber and mix Close
