Malaysian Beef Curry

- 1 lb lean beef (top round works well), trimmed shopping list
- 3 C coconut milk shopping list
- 1 T coriander shopping list
- 1 T pepper shopping list
- 1 stalk lemon grass in 2-3 inch pieces shopping list
- 6 cloves shopping list
- 1" cinnamon stick shopping list
- 4 green cardamoms shopping list
- 3 bay leaves shopping list
- 1 t cumin shopping list
- Thai chilies or similar to taste (toss in at least 4 or 5), chopped shopping list
- a couple of shallots, chopped shopping list
- 2 T ginger, grated (make this fifty fifty ginger and galangal if you can find galangal) shopping list
- 2-3 cloves garlic, minced shopping list
- 1/4 t turmeric shopping list
- 1 t salt shopping list
- 1 t sugar shopping list
How to make it
- Heat oil in a wok, stir fry everything except the beef, salt, sugar, and coconut milk until fragrant.
- Add the rest, cover, and simmer until the beef is tender, roughly 1.5 hours.
- Serve with rice.
