Crispy Baked Fish Sticks with Cajun Tarter Sauce

- 2 Tablespoons vegetable oil shopping list
- 2 cups panko, toasted shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon cayenne pepper shopping list
- 3 eggs shopping list
- 1 1/2 lbs boneless cod or halibut fillets, cut into 3/4 inch thick strips shopping list
How to make it
- Spread oil on a baking sheet and position on a rack in the upper third of the oven. Preheat to 450
- In a large bowl, combine panko, salt and cayenne
- In another bowl beat eggs
- Coat the fish with the seasoned panko, dip in beaten eggs, then recoat with panko
- Arrange the fish in the preheated pan and bake turning once about 10 minutes
- Serve with the following sauce
- CAJUN TARTER SAUCE
- In a small bowl, combine 1 cup mayo, 1/2 cup finely chopped dill pickles, 1 tablespoon prepared horseradish and 1 1/2 teaspoons cajun seasoning
