How to make it

  • Spread oil on a baking sheet and position on a rack in the upper third of the oven. Preheat to 450
  • In a large bowl, combine panko, salt and cayenne
  • In another bowl beat eggs
  • Coat the fish with the seasoned panko, dip in beaten eggs, then recoat with panko
  • Arrange the fish in the preheated pan and bake turning once about 10 minutes
  • Serve with the following sauce
  • CAJUN TARTER SAUCE
  • In a small bowl, combine 1 cup mayo, 1/2 cup finely chopped dill pickles, 1 tablespoon prepared horseradish and 1 1/2 teaspoons cajun seasoning
