Coconut Shrimp Curry

- 1/2 cup butter shopping list
- 2 minced green and 2 minced red pepper shopping list
- 1 minced red onion shopping list
- 2 cups pineapple chunks shopping list
- 1 1/2 lbs shrimp shopping list
- 3 cups coconut Nectar shopping list
- 1 cup milk shopping list
- 1 tablespoon lemon juice shopping list
- 4 cups chicken broth shopping list
- 1/2 teaspoon ginger shopping list
- 2 cloves garlic (to taste) shopping list
- 3 teaspoon sugar shopping list
- 3 teaspoon salt shopping list
- 1/2 cup flour shopping list
- 2 1/2 tablespoons curry powder (or more to taste) shopping list
How to make it
- Melt butter, add sautéed onions and garlic in wok
- Add peppers and curry powder.
- Blend in flour and seasonings.
- Cook over low/medium heat until bubbly.
- Remove from heat.
- Stir in broth, milk, and nectar.
- Add pineapple chunks (drained of juice)
- Bring to boil, stirring constantly, and boil one minute.
- Add shrimp and lemon juice.
- Heat.
- Serve over steamed jasmine rice.
