How to make it

  • Prepare the water by mixing it with cornstarch. dissolve and set aside.
  • in a wok, put in oil, and when hot enough, saute onion, garlic, chili and ginger
  • throw in chicken pieces
  • add soy sauce
  • stir to make sure chicken is covered in soy sauce
  • cover the wok for about a minute or until chicken releases its oil (make sure you don't burn the chicken! eternal vigilance, people!)
  • add in the water and cornstarch mix and bring chicken to a boil.
  • Stir until sauce thickens
  • do a taste test. if the sauce is bland, add in a little more soy sauce
  • add in a dash of pepper
  • simmer and serve.
