How to make it

  • preheat oven to 350
  • in a large bowl combine butter and sugar, beat until light and fluffy
  • Add almond extract and egg, blend well
  • add flour and baking powder, blend well
  • stir in the 1/2 c. chips
  • divide the dough into 4 equal parts,on lightly floured surface, shape each part into a 12" roll
  • place each roll about 3" apart on 2 ungreased cookie sheets
  • using the handle of a wooden spoon, or your finger, make a depression about 1/2" wide and 1/4" deep lengthwise down the center of each roll.
  • Fill each roll with 2 tblsp. of jam.
  • Bake for 15-20 minutes or until a light golden brown, switching the sheets halfway through baking time.
  • remove from oven, cool 5 minutes
  • slice each roll on the diagonal into 12 cookies, cool completely
  • For icing:
  • in a small microwave safe bowl, place 1/3 c. chips and the shortening.
  • mike on high for 30 sec., stir, continue mike-ing, stir every 10 secs. until melted and smooth
  • drizzle over the cool cookies.let stand until icing is set
  • store in a loosely covered container.
