Spicy Mediterranean sausage soup

- 5 cups low sodium chicken stock shopping list
- 1lb of hot (mild if you don't like hot) Italian sausage (out of casing) shopping list
- 1/2 large red bell pepper, chopped shopping list
- 1/4 lb of sliced mushrooms shopping list
- 8 asparagus spears, chopped shopping list
- 1 tsp of minced garlic shopping list
- 1 tbsp of tomato paste shopping list
- 1 tbsp of basil pesto shopping list
- 1 tbsp of parmesan cheese shopping list
How to make it
- Cook sausage meat in a frying pan until cooked through.
- Put all the ingredients in a pot (including cooked sausage) and bring to a boil on high.
- Lower temperature to med/low.
- Let simmer for 20 minutes until asparagus is tender.
- Serve in bowls with Parmesan cheese sprinkled on top.
