Vegetable Medley Nacho Platter

- 1 bag of multigrain corn chips shopping list
- 1/2 lb of lean ground beef, cooked shopping list
- 14 grape tomatoes,cut in half shopping list
- 1/2 small onion, chopped shopping list
- 1 medium carrot, grated shopping list
- 4 asparagus spears shopping list
- 1/2 red bell pepper, chopped shopping list
- 1 tsp minced garlic shopping list
- 1 1/2 cups of grated cheddar cheese, divided shopping list
- 2 tsp low sodium taco seasoning shopping list
- 1/2 tbsp canola oil shopping list
- 1 tsp dried parsley shopping list
- pinch of salt and pepper shopping list
How to make it
- Preheat oven to 350° F
- Cook beef in skillet until cooked through (approx. 7 min)
- Drain liquid and mix in taco seasoning, put in a bowl and set aside
- In the same skillet, add the oil, carrot, asparagus,pepper,onion and garlic
- Cook on med/high heat for around 3 minutes
- Line cookie sheet with foil and parchment paper (for easy clean up)
- Spread corn chips on sheet
- Sprinkle half of the cheese on top
- Spread meat and veggies (except the tomatoes) on top
- Sprinkle the rest of the cheese on top
- place tomatoes and parsley on top of the cheese
- Bake in the oven for 10 minutes (until cheese has melted)
