Natural Box Cake Mix

- 2 cups whole wheat pastry flour shopping list
- 1 1/2 cups sugar shopping list
- 4 teaspoons baking powder shopping list
- 1 teaspoon salt shopping list
- 1/2 cup plus 2 tablespoons vegan shortening, softened shopping list
How to make it
- Put flours into the bowl of a food processor.
- Add sugar, baking powder and salt and process until blended.
- Cut shortening into 4 or 5 chunks, then add to flour mixture and pulse until completely incorporated.
- Use cake mix immediately or store in the refrigerator in an airtight container for up to 1 month.
- To complete cake: add 2 eggs, 1 cup milk, 1 teaspoon vanilla extract
- For vegan: substitute 1/2 cup applesauce for eggs and substitute 1 cup plain unsweetened soy milk, where there is ONLY soybeans and water on the ingredients. Any other ingredients, even when it says unsweetened, can alter the taste.
- Bake 350. For 9- x 13-inch cake, for 40 to 50 minutes; two 8-inch cakes, check after 25 to 35 minutes, or until done when tested with a toothpick.
